Certainly, I'm not disputing their right to do it - I'm questioning
their reasons for doing it.

Changing the UA string in Safari 3 on Mac OS X to Mobile Safari didn't
work.

I know how to do it in Firefox using about:config, but it's not
something I routinely do.
