its the iphone equivalent of favicon.ico

its normally  a 57x57 pixel png graphic thats put in the root of the 
website - when you bookmark that site to your dashboard thats the 
graphic that is used to denote it..

when apple developed the interaction they decided to name the iphone 
equivalent of favicon to apple-touch-icon - its just a graphic png file
