Steve, I've never messed with YouTube on iUI, but I noticed when writing documentation for iUI that it ignores youtube links so that the iPhone can handle them natively. In other words, if you include <a href="http://www.youtube.com/watch?v=NRJHKzU_t1M">link</a>, the link should function properly (opening the phone's youtube application).
