I fixed this issue by modifying CDVSplashScreen.m, in the updateBounds method.

The line:

imgBounds.origin.y -= statusFrame.size.height;

Should not execute when we're on iOS7, as the status frame doesn't count 
towards offsetting the content of the splash screen.

I fixed it by adding the macros from http://stackoverflow.com/a/7848772/54144 
and wrapping the line above like so:

if (SYSTEM_VERSION_LESS_THAN(@"7.0")) {
  imgBounds.origin.y -= statusFrame.size.height;
}
