[FLINK-9181] [docs] [sql-client] Add documentation for the SQL Client
## What is the purpose of the change
This PR documents the SQL Client and all available table source connectors
and formats so far.

Documentation added.

This change is a trivial rework / code cleanup without any test coverage.
