## What is the purpose of the change
This fixes issues with `TableResult.collect()` and inline structured types
created from within SQL.
## Brief change log
The collect sink will derive a data type that matches the specific
conversion classes of the structured type's implementation class. This happens
lazily to not require the classloader containing the users class inside the
planner.
Since the data type utilities are quite messy, I cleaned up some classes for
future code mantainability.
## Verifying this change
This change added tests and can be verified as follows:
`StructuredFunctionsITCase`
