Review Comment:
   makes sense. I see the [HTTP 
connector](https://github.com/apache/flink-connector-http/blob/main/flink-connector-http/src/test/java/org/apache/flink/connector/http/table/lookup/HttpLookupTableSourceITCaseTest.java)
   does some mocking of HTTP requests. This might be overkill for you. Using 
that sort of framework with a mocked schema registry and no WireMockServer 
might a be a sweet spot of low effort and good test coverage. WDYT?
