The connector's multi-version test matrix ({{mongodb4}}, {{mongodb5}},
{{mongodb6}}, {{mongodb7}}, added in FLINK-36053) doesn't cover MongoDB 8.0, GA
since October 2024, now at 8.0.32.
Depends on the mongo-driver bump to 5.11.1 landing first — that's the version
range (5.8–5.11) with full compatibility across the 8.x line per the driver's
matrix, rather than 5.1.1's partial support.
Changes:
* Add {{<mongodb8.version>8.0.32</mongodb8.version>}}
* Add a {{mongodb8}} profile setting {{mongodb.version}} to it
* Add {{mongodb8}} to the CI matrix in {{.github/workflows/push_pr.yml}}
