I can't speak to https://github.com/developer-advocacy-dremio/quick-guides-from-dremio/blob/main/sparknotebook.md but the Quickstart example I mentioned further above is the official Iceberg one that is maintained by the community, so I'd suggest to check what you're missing from that.
