This is testing creating a dynamic table in Flink Catalog
([GenericInMemoryCatalog](https://ci.apache.org/projects/flink/flink-docs-release-1.20/docs/dev/table/catalogs/#genericinmemorycatalog))
backed by Iceberg table.
Something similar to
https://iceberg.apache.org/docs/nightly/flink-connector/#flink-connector , but
we are adding ability to create using LIKE.
