I looked a bit more, I think the issue is at this line https://github.com/apache/iceberg/blame/7d0395d4b6f8d690d70910fe2018a459582960e3/core/src/main/java/org/apache/iceberg/rest/CatalogHandlers.java#L351 when try produce the finalMetadata, we should also consider catalog default table properties and override table properties.
