TLDR: Support Iceberg on S3-compatible S3 stores.
NIFI-15062 re-added the Iceberg processors and services, but with big internal
changes. On of them being to use the S3IcebergFileIOProvider instead of Hadoop
libraries.
With the Hadoop client we where able to specify a XML to configure the S3
endpoint and path style access. We are now missing this configuration, which is
needed e.g. for MinIO or other self-hosted S3 stores.
