According to the [Oracle Java SE Support
Roadmap|https://www.oracle.com/java/technologies/java-se-support-roadmap.html],Java
21 LTS is now available for almost 2 years and Java 17 LTS is planned for
"Premier Support" until September 2026.
This is issue is to document, that the minimum JDK level of OpenNLP should be
raised to 21 some day soon.
For now, I've defined the fix version to the planned 3.0.0 releases, including
related milestones if we plan to provide them.
