URL: https://github.com/apache/paimon/pull/10644

   ### Purpose

   Linked issue: #10574

Backport #10575 to `release-2.1`. Iceberg snapshot summaries written by
`IcebergCommitCallback` in 2.0.0 and 2.1.0 undercount `total-data-files`,
`total-records` and `total-files-size`, which can reach 0 while the manifests
still have live files. Engines that check these fields, such as Snowflake
during refresh, then decline to refresh the table. With this fix, tables that
already have wrong totals are corrected on their next commit.

   ### Tests

   - `mvn -B -pl paimon-core -Dtest='Iceberg*Test' test`: 194 tests pass.
   - `mvn -B -Ppaimon-iceberg -pl paimon-iceberg test`, run against a
`paimon-bundle` built from this branch: 66 tests pass, 2 skipped as on
`release-2.1`.
   - `spotless:check`, `checkstyle:check` and `git diff --check` are clean.

The cherry-pick of merge commit `dd320865523ba93695a0fcea1496363c130bb8d3`
has no conflicts or additional changes, and its patch ID matches upstream.

   ### API and Format

No API change. The optional summary fields in Iceberg metadata now have
correct values. No format change.

   ### Documentation

   No.
