## Context
- In https://github.com/apache/parquet-testing/pull/102, I didn't use the
correct 3-level structure for the list field of `INT64` type. This PR fixes it
and updates the README.md with the latest schema.
## Tests
- With the updated AES-256 encrypted Parquet files, I am able pass tests in
https://github.com/apache/arrow-rs/pull/9203 w/ the hacky
`int64_field.list.int64_field` column name.
