In the past I've had problems compiling Phoenix with a different Hadoop minor
version than what HBase was compiled with.
We could either:
- Update the default Hadoop version in the HBase 2.5 profile only.
- Update it for every profile, but then we also have update the build docs and
the CI tests to recompile HBase against Hadoop 3.2, not 3.1.1, which IIRC is
the default for Hbase 2.3 / 2.4
Nit: The PR only updates the default Hadoop version, we don't really define or
enforce a minimum Hadoop version for Phoenix AFAIK.
