### Body
Complete the switch from Kafka to NATS as the default message broker by
migrating the compiled default protocol and the client end-to-end test stacks.
## Description
NATS is already the default broker for the documented deployments: the
root docker-compose.yml, the compose installer files, the Helm chart and the
dev container all set the prioritized protocol to nats. Two places still
default to Kafka:
- The compiled fallback Envs.SP_PRIORITIZED_PROTOCOL in
streampipes-commons defaults to kafka when the environment variable is not set,
so a backend started without the variable still selects Kafka.
- The client end-to-end tests in streampipes-client-e2e run against Kafka.
The single-instance docker-compose.yml pins the backend to kafka, and
docker-compose-loadbalance.yml sets no protocol and therefore inherits the
compiled Kafka default. Both stacks additionally start a NATS container because
the Java tests ground their adapter, streams and sink on NATS.
Both should be migrated so that the compiled default is nats and the
end-to-end test stacks run the backend with NATS as the prioritized protocol,
in line with the rest of the project.
