Anything you can map to iText XML for "conversion" to PDF should be just as easy to convert to HTML. Chapter 7 of the iText tutorial should have some helpful information. There is also a set of classes in com.lowagie.text.xml that provide a ready-made interface to translate iText XML to the output formats available in iText (HTML, PDF, RTF) which may or may not be of use to you. There is an abstract class called XmlToXXX; if you view its javadoc you can quickly see its similarly-named subclasses.
