I have to take an existing pdf (a scanned form that already
exists on paper) or build it myself (not so appealing) and then add the
dynamic bits at fixed locations (no problem i think) and som acroformfields
(i'm new to this with acroforms so i hope this i how it works) the users
could insert som text in on the screen. Is this at all possible with itext??

Yup - no problem. You can load the existing PDF into the PDF as the background and then place whatever other text and fields you need on top...
