Also, you could extend the iText image class and add your own handler for
what happens if the image isn't found.  You could then put in your own
default image.  My original solution worked for both my HTML production and
PDF production.  This solution would work only for PDF production.

I handled this very problem by having an image servlet return my images.  If
it can't find the image, it returns an image that says, "no image
available."
