The question here was how to append another signature to an already signed and encrypted document. I can't do it in Acrobat so, I suppose that it's not to be done.
Oh, I thought it was just signing an encrypted doc.
As for signing an already signed doc, in THEORY in should be possible per the PDF specs, but there are technical reasons why Acrobat 6 doesn't support it. Mostly related to the fact that you really want "range signatures" not "entire document signatures" when doing multiple sigs on a single doc.
Just remember that is MUST be an "appended save"...
