I'm not quite clear what you want exactly. Do you want this header to be displayed on all pages? Do you only want it on certain pages? HeaderFooter will suffice for headers on all pages. For more complex headers/footers you will need the RtfHeaderFooter. The grey colour is a Word feature. To distinguish the header/footer from the rest of the document while editing it is greyed. Try printing it.
