I am surprised that you are finding the iText version to print differently - but there is a difference in the images.


The Adobe PDF has converted that TallPine logo to an indexed 8bit (uncompressed) data stream - while the iText version has used JPEG/DCTDecode compression on the image.

There are a variety of other differences in the internals of the PDF as well (eg. use of Form XObjects vs. inline data, etc.)
