Let me ask you a question:
you can probably make chicken soup from a chicken,
but can you make a chicken from chicken soup?
I don't think so, yet that's what you are trying to do.
You have made a PDF (the soup) with some content (the chicken),
while doing this, all structure of the original content was lost.
You can't retrieve paragraphs, tables, etc... from the PDF you
have made. At least, I'm certain iText can't do that.
Other tools may claim they are able to do it, but I don't know of any.
