If you are adding text at absolute positions, you don't really need
chunks, you can change the rendering mode with setTextRenderingMode

and all text that is added afterwards will be rendered according to the
mode you chose.
If you do want to add high-level objects, such as Chunks, Phrases,
Paragraphs,... at absolute positions, you can do this with ColumnText.
