Yes it is; iText can also manipulate existing PDF files,
but as you found out it can't be used for editing the
content of a PDF or for converting PDF to another format.

(and it does that job
well.) I see it can read an existing pdf and am trying to learn what
it (iText) and the underlying pdf format make available to a Java
programmer.
You have access to the low-level PDF syntax and you
can change PDF dictionary objects and so on, but it
demands a thorough knowledge of the PDF Reference.
A first step could be to run the iText toolbox and
have a look at your PDF using the TreeViewPdf plug-in
(under properties). It allows you to look under the hood
of the PDF file.

If it exists in the file (as opposed to being created by
the Adobe pdf viewer) I am trying to access the thumbnail for a page.
If you can find the thumbnail image (not the thumbnail
generated by Adobe Reader), you can inspect the code
of the TreeViewPdf plug-in to see how to extract the
image stream.

It is astonishing how large iText and the underlying pdf technology
are. That such a tool and access to the developers exists speaks very
well for open source. I believe a book is underway, I know I will be
both a buyer and a reader.

Thanks! I now have about 350-400 pages. I still have three
or four chapters to write + some topics in the appendix.
I think the review of the complete manuscript will start
on February 14. Then it will take some months to make
a production version and print the book.
It should be available in the summer.

Bruno
