You can do it 'the hard way', using iText only.
But I am told that you can also use iText in combination with JPedal.
I think there's a tutorial on jpedal.org somewhere about it.
The basic idea is that you use JPedal to visualize your PDF
and JPedal uses iText to add the AcroFields you define in the JPedal GUI.
Let me know if this is right, because it would be a good topic for the FAQ.
