Various
features of PDF 1.5 have already been built into iText... object streams and
optional content come to mind. There's nothing in iText that automatically
changes the resulting PDF's version number. You have to do that yourself
with a call to PdfWriter's setPdfVersion(char).
Support for
post-1.4 features isn't comprehensive. They're built in when ever someone
needs them. I don't know of any 1.6 features in iText, for example (which
is hardly definitive).
