But if I fill out the form in Acrobat and sign it in
Acrobat, everything works fine.
If I use the functionality inside the formular to fill it
out and sign it, then the formular will be signed and not editable afterwards.
And the languagebuttons will work. This is the exact behaviour I am looking for,
but I need to do it in iTextSharp. Is this impossible?

That's Acrobat's behaviour. You can't certify or encrypt it. In
both cases changing the fields will go against the permissions. By the way,
you'll have to change in your code
AcroFields form = pdfdoc.AcroFields;
to
AcroFields form = st.AcroFields;

Subject: [iText-questions] Error in PDF file after filling in and signingHiI have a PDF file (http://www.eliasen.dk/files/20031008 TakeBack.pdf) which has some funny functionality.If you open it, you can see that at the top there are some language-buttons. If you press any language-button, all text in the PDF formular except the text you have filled in yourself, changes to the language of your choice. But if I fill in values into the fields and then sign the document, these buttons stop working. I can still click the buttons, but instead of the text switching to another language, the text disappears all together :-(I have placed my code to fill in values into the Form and signing the form at http://www.eliasen.dk/files/PDF_Assembler_External.cs for you to look at. Also, an XML file is needed to run the code, because the PDF fields get their values from this XML file. It is placed in http://www.eliasen.dk/files/Input.xml.I have placed the three file in a zip file at http://www.eliasen.dk/files/Signing a PDFDocument.zipIn order to test the code, you will need a valid certificate, as I haven't included mine :-)Any thoughts are very welcome.Med venlig hilsen
