The best solution seems to store field data in the database and only generate PDFs when needed. This should be more compact as well.
If the user should input/change field data I would suggest using an ordinary web app for that rather than involving PDF. But maybe experts of Acro Forms have other ideas :-) I don't see PDF as a particularly powerful "input medium" compared to web apps.
