There's a way to not embed Unicode TrueType fonts but it's not by just
removing the font file from the font descriptor. If you can, please send
me privately one of those WingArc reports.

No. In any case you'll only gain something if all the text is left
aligned so that you don't have to calculate the metrics. You can look at
the FontSelector source and do something similar for PdfContentByte.
