Your initial question didn't mention that you wanted to add XMP metadata to each page, only to a PDF document. If you read my latest blog entries, you'll find some hints as to why I'm being more sarcastic than usual lately. It has nothing to do with iText (and even less with iText users). Revisiting your earlier mails, it's still not clear to me if you would prefer to add the XMP to each page while generating the PDF or afterwards, adding the XMP to each page of an existing PDF.
