Do you mean like this?
PdfDictionary dict = this.stamper.getReader().getCatalog();
dict.remove(new PdfName("/Metadata"));
This produces the same result as using
stamper.setXmpMetadata(new byte[0]);
stamper.setXmpMetadata(null);
