If you do not embed the font in the PDF, then the PDF viewer is free  
to substitute any available font that it chooses.   It will certainly  
try to match 100% (eg. if you say Helvetica and Helvetica is  
installed, then it will probably use it) - but it's not required to.

This is why you should ALWAYS embed (and optionally subset) fonts...
