On the tutorial page:

There is a link to download the hyphenation rules through:
http://itextdocs.lowagie.com/downloads/itext-hyph-xml.jar
But no file can be downloaded from that link.
I think that the link should be updated to
http://sourceforge.net/project/downloading.php?groupname=itext&filename=
itext-hyph-xml.jar
