Some time ago I managed creating a signed and timestamped PDF file with
iText (** without changing iText code**) and I sent the working code to
Paulo through the ml.

If you search with google for 'PDF Signature and Timestamp - Working CODE'
you should be able to find my post.

Not sure Paulo added it to the list of examples.
