It is not possible in iText. You might want to take a look at PDFBox, instead.
Admittedly as it3xt suggest, it is a horribly difficult task. Even Adobe
Acrobat doesn't do a perfect job of it, so don't expect a perfect job from
PDFBox either. However, depending on your purpose, you might still find it
useful.
