A pdf doesn't work like a word document. You can't reflow the content of the
pdf including changing the page numbers.

As an example to make it more clear.

Take any book and rip out one page, do you see the page numbers change? No
of course not because they are printed on the page. Same goes for the pdf.

The only thing you can do is to take the resulting pdf (with the removed
pages) and stamp over the existing page numbers something that would hide
the text (box or white image) and renumber the pdf.
