Have you looked at the iText website? Did it mention anywhere anything about
PDF to XXX format conversion?

For example, take the products presentation page [1]. It reads:

"[iText] offers different ways to create and manipulate PDF documents."

And that's it. Nothing more, nothing less. iText does PDF creation and
manipulation, and it does it quite well, but nowhere you'll find references
to PDF conversion.
