PDF is not a Word processing format. You can use iText to
/manipulate/ a PDF (fill in form fields, stamp extra data),
but in general it's impossible to /edit/ a PDF document.

It depends on what you mean when you use the verb 'edit'.
It might be impossible in general (regardless of the tool
you're using). You'll have to explain what you want to do.
