There are also numerous existing projects – from open source to commercial – 
that do what you want.  Why reinvent the wheel, just license one of them?

iText is NOT a document conversion library. Its purpose is creating and/or 
manipulating PDF files. You'll have to look for another product. OpenOffice UNO 
could be a good start to look at. File printers could do the job too.
