No, timestamping has to be done at the moment you're signing.

Yes, but that's not even implemented in Adobe Reader,
and it will only be in the PDF specification somewhere in 2011
(ISO 32000-2).

You can already go to http://portal.etsi.org/ and you can download PAdES 
1 to 5. You don't need to be a paying member, the specs can be 
downloaded for free, but I found the site to be a labyrinth; it took me 
a while to find the documents.

However: for the moment, this is a standard that hasn't been implemented 
by many companies yet, so if you need a solution this year, you're out 
of luck.
