Two different things are at play:
1) You're probably right that you need another font, but what is "Adobe
Hebrew"? Is it a font? If so, how are you changing the fonts to this
font? Section 8.3.3 "Text fields and fonts" demonstrates different
strategies to change the font. Which one of those strategies did you try?
2) Hebrew is written from right to left, and iText only supports this
writing system in ColumnText and PdfPCell. What are you doing with the
Hebrew String on the server side? If you want to flatten the form, you
may need a different approach (as is done in 8.5.4 "Customized form
flattening").
