iText doesn't create tags/marked content on its own. You have to
explicitly do that as a separate step. Not Trivial. And adding it now
won't help you with your existing PDFs.
What you want is all but impossible.

What about extracting colspan and rowspan attributes from the
table? By extracting the tagging format of a table, you can decompose
how the table was constructed but unfortunately I cannot find a way to
find the colspan and rowspan information.
