Options: Search text and replace '-' and '|' with '|' and '-' respectively prior to adding it to the VerticalText.
Search the text and add only those characters in a font that swaps them for you. Create one or more Type 3 fonts (single byte, so you'd have to do more text searching to figure out which font to use after your 256th unique character), and use that font instead. All the options involve searching your input string[s] prior to adding them to a VerticalText.
