It's not possible, the signature covers all the text but you only have the date
after signing.

Subject: [iText-questions] Timestamp Date on visible sign
Hi,
I am signing a Pdf document with Itext and Bouncy Castle and including Time
stamping. It works fine, but I would like to include the Time Stamp date on
the text of visible sign (PdfAppearance).
Is this possible???
Thanks in advance.
