Those are two different questions, and there is no single answer to
them. If you know EXACTLY how the watermark is created and you know
EXACTLY where to find that watermark, then you can use iText to remove it.
The main problem is that you can add watermarks in many different ways,
both with iText and Adobe. For instance: when I create a watermark using
iText, I often but the watermark in an OCG.
In the book hower, the watermark is added as an ordinary content stream
(because OCG aren't explained until chapter 15). You can add a watermark
UNDER the existing content, but if you have plenty of images in the
content, you can also add it ON TOP OF the existing content (either as a
transparent or an opaque watermark).
So... if you're looking for a "removeWatermark()" function, that's not
an option. It's not possible with iText, nor with any other tool. If
you're looking to remove watermarks that are added using a WELL DEFINED
procedure, then you should hire somebody to write SPECIFIC code that
removes that particular type of watermarks.
