Please bear in mind that PDF is *not* meant for editing, it's a
presentation format. As a consequence, what you want to achieve is far from
being trivial, and will not be feasible in most of the cases.

However, if the first row of every table is at a fixed position and has a
fixed size, you can still stamp a transparent colored rectangle over the
desired area, kind of achieving a change of the background color.
