You have two choices.

 1.  Get a custom font that includes the symbols you need
 2.  Draw the line yourself on top of the symbols

Another option is find a Math layout engine that draws to a Java2D surface, 
which can then be easily converted to PDF.

I’m trying to produce a square root symbol which can extend.

Anyone who could suggest how to do this then please reply as I’m trying to 
produce maths sheets for my pupils.
