You're looking for a specific type of "Viewer Preferences", more specifically "Printer Preferences". If you read ISO-32000-1 (the ISO standard defining PDF), you'll see that there's an option to set the PrintScaling.
However, the option you're asking for, isn't defined.In short: this isn't an iTextSharp problem. You're asking about something that isn't defined in PDF.
